Po at The Warehouse Hotel Introduces a New Menu

Po at The Warehouse Hotel announces a thoughtful reimagining of its culinary identity, ushering in a dedicated celebration of Singapore’s Nanyang Heritage with its brand new menu this October 2025.

The new menu showcases the cultural intersections that define Nanyang cuisine, presenting dishes that reflect the spirit of Singapore, where influences from every ethnicity come together at the table. Every component of each dish is painstakingly made from scratch, using only the finest Asian ingredients and the most meticulous time-honoured cooking techniques.

Guests will find starters such as the Ikan Kerabu, featuring yellowtail cured with calamansi and topped by a vibrant and piquant medley of vegetables and herbs, alongside the popular 1900s dish, Samsui Chicken, where boneless chicken is gently poached and served with scallions, crispy ginger and garlic. A beloved South Indian appetiser that made its way across the subcontinent, the Gobi 65 features cauliflower florets marinated in a house masala blend and fried to a golden crisp, yielding to a crunchy exterior and tender bite.

Malay heritage dish Puyuh Panggang features a grilled quail prepared with sand ginger (kencur), blue ginger (galangal), and old ginger for a layered depth and fragrance. It is paired with a fiery sambal made with bird’s eye chilli, and a refreshing mango salad that cuts through the heat with brightness and tang. A long-forgotten fish dish among the Eurasian community, Singgang Serani is given new life here, with mackerel stewed in aromatic spices and tamarind, and nestled within a toasted rice shell, finished with tomato jelly.
