Lunar New Year Merriment with Heritage Flavours at Rempapa

Celebrate the beginning of spring at Rempapa this Lunar New Year with Chef Damian D’Silva’s treasure trove of heritage dishes. Lunar New Year is a significant festival well-loved by Chef and his family. During this special occasion, generations come together to create cherished memories over a sumptuous feast, featuring time-honoured recipes from Chef’s Peranakan maternal grandma.

To carry on these traditions, Chef Damian welcomes all to Rempapa for joyful reunions. Bond over nostalgic heritage flavours and a labour of love with special dishes available exclusively for dine-in and takeaway from 25 January to 15 February 2022.

Highlights include:

  • Loh Hei ($38 for 2 to 4 persons). Drawing on rojak, a local dish that spans the different ethnicities and cultures in Singapore, Rempapa’s Loh Hei features a vibrant medley of fresh fruits and vegetables. The symbolic dish comprises pomegranate, pineapple, pomelo, purple cabbage, green mango, guava, jicama, and cucumber. It is served with ginger flower, sesame, peanut brittle, rice roll, you tiao, and finished with a savoury sweet dressing of plum and sesame paste.
  • Ayam Sioh ($38 for half a chicken) is a must-have for Chef’s family during the Lunar New Year. The chicken is marinated for 24 hours with an aromatic blend of dark soya, tamarind, ground coriander, pepper, and fried shallots, then freshly fried upon order.
  • Ikan Assam Surani ($42) – baby threadfin cooked in a sweet and sour gravy with a base of turmeric, shrimp paste, shallots, garlic, and chillies. A "lost" Peranakan dish that usually uses a bony fish that is cooked till the sweetness is extracted. Savour the complexity of the dish – nearly every ingredient is sliced by hand, then fried individually.
